Baked Halibut with an Herbed Mayonnaise Crust
Simple, full of flavor, and done in under 30 minutes!
β cup mayonnaise
1 shallot, finely diced
2 tablespoons lemon juice
Zest of half lemon
2 tablespoons parsley, finely chopped
2 tablespoons chives, finely chopped
1 teaspoon Dijon mustard
Salt and pepper to taste
ΒΌ teaspoon cayenne pepper (optional)
4 halibut fillets
Mix the mayonnaise, shallot, herbs, lemon juice & zest, Dijon, and seasoning in a small bowl.
Arrange the halibut filets in a buttered or greased baking dish, and spoon the mayonnaise mixture evenly over each filet.
Bake, uncovered, for 15-20 minutes at 400 degrees.
Halibut is done when it becomes opaque, and flakes easily at the touch.
When the halibut is done, turn the oven to broil, and give the halibut a couple of minutes under the broiler to create a golden crust.
